2013 WT White Wine

This white wine is a nice blend of Roussanne and Viognier, if the nose seems familiar it is because this is the white we used in the 2012 Dago Red.

2015 Chardonnay

This  Chardonnay sourced from Verna’s Vineyard in Los Alamos was whole cluster pressed. Half of it was fermented in Stainless tanks with QA 23 and Elegance yeast, the other half was barrel fermented in French oak using native yeast. 2015 Rose' of Cabernet Sauvignon

This year we decided to do something different for our Rose program. 2013 Dago Red

We blended this wine in honor of my Grandfather Angelo “Sam” Cassara. Grandpa came to the US in 1911 and worked as a barber in Chicago. The fruit for this offering comes from Tierra Alta Vineyards, Kyle put the grapes through a 3 day cold soak to extract structure and tannins, the wine was fermented with 10% stem inclusion for spice and aged 16 months in large 300 liter barrels.
